Apple and Cinnamon muffins!
Recipe adapted from “Afternoon tea” Mini-loaves recipe by Marks and Spencers.
90g softened butter
1 tspn vanilla extract
100g light brown sugar
200g self-raising flour
1 medium red apple (150g) quartered, cored, sliced thinly
15g butter melted
1 tbspn granulated sugar
1/2 tspn ground cinnamon
1) Preheat oven to 160ºC/140ºC Fan/325ºF. Line a 12 hole muffin pan with paper cases.
2) Beat the softened butter, extract and brown sugar in a small bowl (by hand or with an electric mixer) until light and fluffy. Add egg and beat until combined. Stir in sifted flour and milk, in 2 batches.
3) Divide mixture into cases; top with apple, brush with melted butter and sprinkle with half of the combined cinnamon and granulated sugar.
4) Bake loaves for 20-25 minutes. Sprinkle remainder of cinnamon sugar and stand loaves for 5 minutes before serving.
Simple and tasty. I used brown sugar instead of caster and reduced its amount to reduce calorific content.
